Recipes For the Backcountry Part I

Outward Bound instructor Theo Theobald shares some of her favorite meals

While adventuring in the outdoors, Course Director Theo Theobald and her Outward Bound students need to stay well fed. As part of the Outward Bound curriculum, Theobald teaches how to make delicious backcountry meals that will keep you fueled during long hiking, climbing or paddling trips.  

Here are some of her favorites recipes:

Sweet and Sour Curried Couscous

1 24 ounce bag of couscous
1/4 red cabbage
1 onion
3 cloves garlic
1 cup dried pineapple or apricots
½ cup almonds
2 Tablespoons curry powder
Olive Oil

Directions: Bring water to boil in your camping pot and add in the couscous. Cover and cook until the couscous is fluffy. In another pan, sauté the onion and garlic for two minutes. Add in the cabbage and cook until it is almost translucent (about five minutes), then add in the dried fruit and cook another two minutes, stirring regularly. Add the vegetable and fruit mixture to the pot of couscous and stir until mixed evenly.  Chop up the almonds and sprinkle them on top.

Alpine Spaghetti with Béchamel sauce:

1 bag of whole wheat pasta
1 Onion
1/8 cup Basil
3 tablespoons Oregano
3 cloves Garlic
1/2 cup sundried tomatoes
1/2 cup pine nuts
1 cup parmesan cheese
1 stick butter
1/8 cup flour
1/4 cup milk powder

Directions: Boil the pasta until is it al dente. Meanwhile, chop and sauté the onion and remove from the heat. In another pan, melt the butter and mix in the flour. Mix the flour and milk powder together and add to the warm butter, stir and add water slowly until the mixture has the desired white sauce consistency. Add in the spices, stirring constantly. Remove from heat and add to the strained pasta. Top with pine nuts, parmesan cheese and sundried tomatoes.  

Tuna-Tofu Salad

1 or 2 tunafish packets
1 block of tofu, mashed
1/4 cup finely chopped onion
A dash of soy sauce
A squirt of mustard

Directions: Mix all ingredients together and serve with whole wheat bread or pita.
